Taco Night Makes Life Better.

Oh weekend, I am excited to see you! I found out this week that my last assignment for the year is due December 17th, then I’ll have 3 weeks off. 17 more days…it can’t get here soon enough! In the meantime, I have to decide what shows to watch over Christmas break…

I’m feeling a tad burnt out right now, so knowing I’ve got less than 3 weeks to go is giving me something to look forward to, that’s for sure.

Although having some fabulous eats yesterday made the day better!



My usual banana protein oats (2/3 cup unsweetened almond milk, 1/3 cup oats, 1/3 cup egg whites, sliced banana, a splash of banana and a few drops of stevia) with a tablespoon of cocoa powder mixed in. Topped with peanut butter = chocolate, banana and peanut butter. Really, is there a better combo?

And dinner last night:


I can’t even remember the last time I had taco night. That is just unacceptable, considering my love for Mexican food! I made one small mistake though – I prefer the kits that have the hard and soft shell tacos, but I accidentally grabbed the one with soft shells only. That’s ok…I lived with it. Smile with tongue out

Of course, a taco night necessity:


Homemade guacamole. I used to buy guac on an almost weekly basis, until I figured out how easy (and cheap) it is to make at home. It tastes better too! I love adding a pinch of cumin to mine; it sounds really weird but it adds awesome flavour.

And another homemade side:


Salsa! My mom made her own batch of salsa last month and I’m finally getting a chance to try it now. She’s never canned her own, and I have to say, I am impressed. Nicely done mom! Good texture and flavour with just a hint of spice.

Mmm…tacos. (of course, said in a Homer Simpson voice)


2 tacos stuffed to the brim with all the fixings. Taco meat (I used ground chicken), lettuce, tomato, salsa, sour cream, cheese, guacamole. So stuffed that I couldn’t even fold them properly! Maybe that’s why I like hard tacos better – so much easily to judge how much filling I can shove in there. Smile with tongue out


I went back for a small scoop of the fillings…the best part anyways!

Followed by a few select pieces out of my chocolate cupboard, my night was complete. (Yes, I have cupboard space dedicated to my chocolate stash. I have priorities, people).

I actually don’t have any plans this weekend, which is nice considering that it’ll likely be the last one for a while. I’ve got the usual errands, plus I want to get a hair cut, do a bit of Christmas shopping and get the decorations up. The haircut is so needed; I’m pretty sure my last trim was is June? Oops.

Foodie things that must happen this weekend:

Yogurty’s – I walked past it the other day and noticed their seasonal flavour right now is gingerbread. Must.Happen.

Sushi – My sushi cravings will be dealt with! Eric and I are thinking of ordering takeout Saturday night. Cannot wait!

<— Do you have a chocolate/candy/salty snack stash? Chocolate must be in the household at all times, otherwise I resort to snacking on chocolate chips when I get a craving.

<— Hard shell or soft shell tacos? Chicken, beef, fish, shrimp, something else? I’ve only had fish tacos once when I was Toronto about a year and a half ago, but I really need to try them again sometime.


Ramblings: Pink Nails and Chopsticks.

My brain is too (school-related) fried to put together a coherent post right now. So, this means you get some random thoughts from my day. Smile

1. I’ve never been one to enjoy the colour pink. I was pretty tomboy-ish when I was a kid, and then I went threw my rebellious/goth phase in high school, so it’s just never been high on the list when I go shopping for anything.

But, my mother-in-law gave me a Shellac nail kit for my birthday, so I finally broke it out last weekend and painted by nails what I thought was going to be red.


They’re bright pink (picture not doing them justice as to how bright they are!).

And I think I like it.

Deep down, apparently I’m a pink fan. Good to know.

2. They were playing some absolutely awesome music at my gym today. As in, stuff I hadn’t heard in years and had to restrain myself from singing out loud. I heard Disturbed, Trapt, Papa Roach (basically summing up high school right there) and this little gem:

Anyone remember  this song? I would have been 11 when it came out, but I loved it! I remember thinking that the cheerleaders were unsettling.

3. This may be the best chocolate bar I’ve ever had in my life.


And I’ve eaten a lot of chocolate in my day, so that’s saying something. Dark chocolate, caramel and sea salt might just be the ideal combination for my sweet/salty tooth.

4. Today, I wore a sweater and my fall bomber jacket. It was 2 (35) degrees out. Yes, I am absolutely in winter denial.

Such denial.

5. I’m doing my Christmas decorating on Saturday, a.k.a. December 1st. That is also when I’ll break out the advent calendar (of course) and the Christmas music. WalMart may want to start celebrating Christmas the day after Halloween, but my rule is always December 1st.

(I adore Christmas, I just don’t think it needs to be celebrated for THAT long!)

6. I took the leftovers from Tuesday’s slow cooked chicken and made a teriyaki chicken stirfry with veggies and brown rice. My favourite part is the water chestnuts – weirdest/best texture ever.


7. Whenever I make something even remotely resembling Asian food in my household, I absolutely must eat it with chopsticks.


Because chopsticks = authentic. Of course.

8. Speaking of chopsticks…

Because I have a blog, I can tell that the last time I ate sushi was October 13th. That shit is not acceptable.

Odessa roll, I miss you so much. BBQ eel and avocado, topped with salmon and more avocado. Definitely need one of these in my life soon.

9. Having a small program (6 people in my year) has some good advantages. Two different professors are treating us to lunch next week; one day Indian, another day pizza. Anytime someone buys me food = awesome.

10. If I’m having a bad day/get stressed out, I browse the humour category on Pinterest.

Seriously, always makes me giggle. (and that’s happened to you before, right?)

WIAW #12: Cut Squash, Not Fingers.

Good morning! How’s your week going so far? I’ve been ridiculously busy with school this week, so it’s been going by fast. No complaining though, I’m definitely counting the days until Christmas vacation!

Yup…it’s definitely Wednesday. Thanks to Jenn for hosting! These are my eats from yesterday:


Kind of an unusual one for me, but it worked really well.


I figure sweet potatoes are sweet enough to be a breakfast food, right? I made one up quick in the microwave, added a scoop of peanut butter and threw two sunny-side up eggs on top.


Sweet potato, peanut butter and eggs….is that weird? Whatever, it was delicious and it will definitely be a breakfast repeat. Smile


I love Tuesdays because I don’t have to be at school until 1. This means I actually get to eat lunch at home, as opposed to packing something to take to school with me.


I had a veggie burger on a sandwich thin with a side of steamed broccoli and cauliflower.


The burger had romaine, tomato, banana peppers, pickles and honey mustard.

When I was a kid, I absolutely hated pickles (as well as a lot of other food…I was a picky eater, to say the least). Now they’re a burger must-have; so good!

The packed snack to eat during class:


An ambrosia apple and a cheese string. I’m pretty sure this was my most-frequently-eaten afternoon snack during the last two years of my undergrad – felt nostalgic bringing it back!


While I was in class today, the main dish for dinner was cooking away at home. Yup – the slow cooker. Love of my life, that thing.

So, you want to know the absolute easiest chicken recipe ever?

Here you go:

1. Buy a whole chicken that’s already tied and had the gross bits removed.

2. Season chicken with whatever you like. I went with salt, pepper, and roasted garlic – keeping it simple.


3. Place chicken in slow cooker. Set on low. Walk away for ten hours.


And there you have it – the easiest chicken recipe in existence. It makes for a flavourful, fall-off-the-bone chicken. In fact, it was so tender I couldn’t even pull it out of the slow cooker in one piece (hence why there’s no after picture – a pile of chicken parts does not make for a pretty photo).

Since that part of dinner was taken care of, I went right to work on the sides when I got home.

Remember that spaghetti squash I bought last weekend?


I figured it was a good night to try it out. Of course, cutting a squash is terrifying – especially one that’s this shape. The goal: cut the squash. Avoid fingers and other body parts.



I brushed the squash with a mixture of melted butter and maple syrup, then sprinkled on salt and pepper. It went into the oven face down for 30 minutes at 400 degrees.

The “forking” process (cue uncontrollable giggles here) was actually pretty fun – this stuff has an interesting texture, doesn’t it? I mean, I would never mistake it for spaghetti, but as a side dish it’s pretty tasty.

I steamed up some green beans on the side to round out the meal.


I went back for a few more bites of chicken and squash – both were delicious!


I’m determined to reinvigorate my love for tea. I’ll drink it daily for a few weeks, but then I’ll stop and I don’t care less for a while. It’s tasty (especially with a few drops of liquid stevia thrown in) but maybe I’m just lazy? I have a tea press, maybe I should start brewing up some loose leaf tea something…although that means someone would have to tell me how to actually use the thing properly. Smile with tongue out


The before bed snack:


Strawberry Banana Chobani with some Trader Joe’s Cat Cookies. The day that my container of Cat Cookies becomes empty will be a sad one indeed – I’ve been eating at least a few daily. Easily one of my favourite snacks right now!
