Hello, hello! (I guess that title kind of encompasses everything, doesn’t it)?

I hope everyone’s been enjoying their weekend so far. Mine has been nice, starting Friday morning with a yogurt-bowl breakfast.

Messy bowl eaten out of the yogurt container – yup, I’m classy. Vanilla Greek yogurt, banana, blueberries, Fiber 1, and some Nature’s Path Dark Chocolate and Red Berries granola. Good start to the day, for sure.

And to finish class in the afternoon:

I may have established a new Friday afternoon ritual for myself. Seriously delicious in all of it’s aspartame glory.

My knee was still tweaking a little bit on Friday, so the gym was a no-go. Honestly, I think it’s more just tight muscles than anything else, I’ve been seriously neglecting my foam roller lately. So, I dedicated some time to stretching it out via yoga and foam rolling for a while.

Small apartment means that home workouts get done in the archway between the kitchen and the living room. Hey, if it works, it works!

Dinner

Dinner was pretty fabulous, if I do say so myself.

BBQ Chicken pizza on a whole wheat crust. The pre-bought crust came with pizza sauce, so I added a few spoonfuls of BBQ sauce before I added it to the pizza. For toppings, there’s shredded chicken tossed with BBQ sauce, red bell pepper, green onions and mozzarella. It was pretty fabulous.

I’ve also come to the realization that I’ve never attempted homemade pizza crust before – that should go on my bucket list. Anyone wanna teach me how?

Groceries

Of course, yesterday morning was all about groceries and meal planning.

Meal Plan

  • Saturday: leftovers
  • Sunday: chicken and veggies
  • Monday: Chelsea’s Adzuki bean and butternut squash enchilada saute (I was trying to think of something to keep my Mexican food kick going, when this popped up on my reader. Girl read my mind!)
  • Tuesday: bacon and eggs
  • Wednesday: shrimp and garlic bread
  • Thursday: steak and veggies
  • Friday: homemade chicken pot pie

Tasty week. Smile

For the record, I lasted approximately 20 minutes before digging into that coconut Oikos.

Mmm…wonderful. Had a tropical feel to it, without the coconut feeling overbearing.

<— Best Greek yogurt flavour? I actually usually go with plain or vanilla, but this one’s pretty awesome. Although, I think my absolute favourite is Chobani Apple Cinnamon.

  1. I’ve been using vanilla greek yogurt as a spread on top of my bagels instead of regular cream cheese. It’s much less expensive, tastier, and has more nutrition to it. I love cream cheese, but really hate the price, and to have found such a tasty alternative? Swoon!
    And I may or may not have done the bottom of the yogurt container mixed with some Rice Krispies as a midnight snack Friday night. Such a good idea! Glad you’re all over that bandwagon too!!

  3. Yum pizza! I’ve never made homemade crust before but my parents make it sometimes and it’s not hard at all! Give it a shot 🙂

  4. That pizza sounds great, I made pizza dough once before and it wasn’t actually that hard! I want to try that coconut greek yogurt! I think my favorite is Chobani pineapple or passion fruit, but I can never find the passion fruit anymore.

  5. Coconut Greek yogurt sounds divine! I wish almond milk was freely sold here! I’ve been making it from scratch lately which isn’t too bad at all but being able to buy it in bulk would sure be convenient! Have a great Sunday, Sam!

  6. Nothing beats homemade pizza dough, girl 😉 Come to the burgh and we’ll teach you how!! And then go find lots of Steelers stuff…you and Joe will get along fabulously for that shared love 😉 YAY for finding coconut oikos!! My usual favorite flavors are cherry/plain/vanilla but coconut will have to make it into the rotation…I’m still deciding on something for dinner this week….I made bbq chicken in the crock pot on friday…but that won’t last past tuesday…woops…suggestions haha?

  7. Your pizza looks great! I have never attempted homemade dough, but I have made homemade pasta and that was quite a process. Probably took me 4 hours. It’s cool to say I did it, but I will certainly never be doing it again. My favorite yogurt is Chobani apple cinnamon too!

  8. That pizza looks incredible! Chobani Apple Cinnamon is my favorite too 🙂 I have not been the best about meal plans and prep lately. We are heading out to do some grocery shopping today though, so hopefully this week will be better!

  11. I’m naughty and don’t do my foam roller enough either. It is usually so painful but I know that means I just need to do it more. Here in Australia they’ve only just brought out chobani. So far I like strawberry but I’m using the plain with everything as its so versatile. Apple and cinnamon sounds good though and I’m looking forward to them bringing out those ‘bites’ flavours 🙂

  13. Yay I’m glad you found the coconut Oikos! I almost bought it again this week, but then I decided to try out the fig flavour instead.

    Also holy cow that BBQ pizza looks amazing. I keep on seeing recipes for BBQ pizza on Pinterest, but I always just stick to traditional pizza. One of these days I need to try it out!

    I hope you enjoy the enchilada saute! My advice: chop the butternut squash in pretty small chunks. 😉 I’m only really making one exciting meal this week (lentil sunflower seed burgers) because I have to go home in the middle of the week for one last interview. I can’t wait to get back to normal meal planning without all these interruptions next week haha.

  15. Mmm whaqt a great yogurt find, I will be on the lookout for that! I have tasted other coconut yogurts before and err hated them, yet feel compelled to give this product a go lol
    Eating out of the container is 100% acceptable and actually just great, no dirty dishes!

  16. I want to attempt a homemade pizza crust at some point too! I usually just stick with a socca crust since its a lot easier to whip up from scratch and cook.

    I made an African chickpea peanut stew and eggplant muffuletta sandwiches on homemade coconut flour-based flatbread for this week–I’ve already had one of the sandwiches and wish I had made more, they’re so delicious!

  17. Yummy dinners make me so happy! 🙂 This week I am planning on a lot of deliciousness, as to what that deliciousness will be… Not so sure yet, but I have a few tricks up my sleeve!

    Totally curious about Coke Zero – can’t wait until Zevia comes up with a Cola-Vanilla flavor 😉
