I’m pretty sure I don’t even need an introduction to Wednesday posts anymore. We all know what’s going to happen.

And of course, St. Patty’s Day means it’s going to be a green month! Oddly enough, the only green meal I really got in yesterday was breakfast. But I’ll take it. On with it, shall we?
Morning Cocktail
Apple Cider Vinegar, lemon juice, water, stevia. The usual right when I wake up.
Breakfast
I wanted to play around with my xanthan gum a little more, so I put together a green smoothie for breakfast.
1 frozen banana, a scoop of protein powder, a handful of spinach, about a teaspoon of cocoa powder, 1/2 teaspoon of xanthan gum and enough almond milk to get it all going. It ended up really thick, which I loved, but it had a weird gummy-like taste to it. Maybe I added a little too much xanthan gum? A few drops of stevia seemed to mask it though.
Topped with blueberries and Love Crunch Dark Chocolate and Red Berries granola. Except minus the dark chocolate because of course, that aspect of the mix is long gone
Mid-morning I was off to the gym for leg day – favourite workout of the week, easily.
1 scoop pre-workout, 1 scoop post-workout (which I drank while foam-rolling! Yay goals)!
Followed by lunchtime.
I had made Chelsea’s Adzuki Bean and Butternut Squash Saute the night before over brown rice (which was absolutely delicious, FYI!), except I used black beans. Leftovers were promptly heated up for lunch and devoured.
I had a quick meeting in lieu of my usual Tuesday class, so I was able to eat a snack at home. I heated up an Apple Pie Questbar (look for the review this weekend!) in the microwave briefly and smothered it with some PB.
Looooved this flavour!
After my meeting (which was fantastic – slowly but surely, my thesis proposal is coming together) I spent some time on the couch getting some work done and munching on a few handfuls of unpictured carrot sticks.
Dinner
Dinner was quick, easy, and fabulous.
Hello, brinner.
Scrambled eggs, bacon, and a piece of buttered toast. So satisfying!
I’ve never particularly enjoyed cooking bacon before – messy, greasy and I would usually get splashed with hot oil. But the last couple of times I’ve cooked it, I’ve baked it in the oven. It’s so much easier!
I line a cookie sheet with tinfoil, add the bacon, and then put it in a cold oven. I set it to 375 degrees, set the timer for 14 minutes, and walk away. It cooks up perfectly, and to clean up, all I have to do is throw the tinfoil in the trash.
So…with this knowledge, I will definitely be eating bacon more often.
Dark chocolate truffle for dessert:
Confession: this is leftover from Christmas. What can I say – my stash was massive going into the holiday season, and then between Christmas and Valentine’s it got even bigger. Don’t worry – I’m slowly making my way through it
Snack
So…I’m pretty proud of myself for my snack last night.
I remembered Laura saying at some point that she’ll stick flavoured yogurt in the freezer, so I decided that making some coconut fro-yo sounded pretty fantastic.
In the morning, I opened one of the coconut Oikos, stirred some almonds and chocolate chips in there, and popped it in the freezer. I took it out about 45 minutes before I wanted to eat it last night, and topped it with a bit of a chocolate casein-almond milk mix, shredded coconut, and sprinkles.
That will definitely become a common snack around here. I loved it! Next time I’ll be sure to put plastic wrap or something over the top when I put it in the freezer though – it had a little bit of iciness to it.
Ended the day on a good note, that’s for sure.

When I was younger and whenever my dad worked late, my mom would make me pancakes for dinner and we would put sprinkles in the syrup 🙂 That quest bar looks like a seriously decadent dessert.

I love baked beans on toast with vegemite (a very Australian thing to have for both breakfast and brinner). My fav simpsons moment would have to be something Homer related. The one that springs to mind is when he is eating the last peanut in a packet and he’s reading out the ingredients and then finds $50 when he drops his last peanut and is disappointed and has to have his brain explain to him how $50 is better than 1 peanut.
That quest bar looks devine looking forward to the review. Will have to try that snack too, I’ve frozen greek yoghurt before but never with mix ins included.

I’m a fan of having an egg scramble with veggies topped with avocado and sriracha sauce plus a side of toast for brinner – I actually had that a few days ago. But really, any brinner is good in my books!
Also I love freezing my Greek yogurt like that. If only I had Yogurtys’ toppings bar in my kitchen… 😛

Yuuum I love brinner any day of the week! Heck I love breakfast food all day long as today’s lunch showed: Toast with pb & j and a side of scrambled eggs, broccoli and strawberries! Love that you added butter to your toast- one of life’s most basic yet delicious foods :)!

WAFFLES!!! Seriously best Friday night dinner after 😉 I love egg scrambles though too…oh and definitely bake the bacon…I get hit with hot oil every freakin time I do it in a pan so it’s just not worth it anymore haha

I want a quest bar!! They are being dangled in front of my face all over the blog world and I am so effing jealous.
Brinner is the best. My dad used to take us to Waffle House for dinner when my mom went out of town. It was the best treat ever. He also has declared himself the breakfast king, and has been making a HUGE breakfast on Saturday or Sunday for our family ever since we were really little–always the same with grits, scrambled eggs, biscuits, and bacon. This summer, he discovered the joys of baking bacon and swears he’ll never go back. It must be INCREDIBLY better that way because this man does not EVER change his ways!

I love brinner! My favorite is yogurt bowls! This weekend when I made ‘scary’ green pancakes I baked bacon for the boy. I was shocked how easy it was. I put mine on a cookie cooling rack over a pan so some of the fat dripped off and the bacon got extra crispy!

I really feel like xatham gum either makes or breaks my smoothie. I hate if the consistency isn’t thick enough. It’s much more filling that way, too. And you’ve probably mentioned this and I just missed it, but what are the benefits of drinking apple cider vinegar in the morning? I’ve seen a few people in the blogging world mention it.

I use it because it’s supposed to help with digestion, muscle fatigue and heartburn. There is a lot of other benefits as well, Laura did a really good post about it:

I hate how xantham gum can make things taste really gummy – that’s happened to me quite a few times now

I’ve been obsessed with Brinner lately! I can’t stop eating it…cereal, oats, oat bran, it’s gone far.
Love, love it. Haha, I love the Simpson’s, such a classic. I don’t know if I can pin point a favorite moment though! Tough one.
Did you like the xanthan and how it thickened? I only use 1/8-1/4 teaspoon otherwise it gets too gummy! And can taste a little odd, so I find you need to add a little extract or little sweetener.

That’s only the second time I’ve used it, so I’m still trying to figure it out – 1/2 teaspoon definitely made it too gummy! I do definitely like the thickening aspect though, if I’m going to have a smoothie I prefer them really thick.

Omg, the apple pie quest bar is so good!! One of my favourites. I think it might still be too cold for me to make smoothies, but in the summer I am definitely going to play around with xanthan gum. I never make them for meal because I don’t find them hearty enough, but if I can eat them like ice cream, I could definitely jump on board. I foam rolled last night, and you just reminded me to do it again today!

I definitely need to add some sort of crunchy element to them, otherwise it feels like I’m just missing an essential component to the meal.

mmm breakfast for dinner!!! i don’t like breakfast in terms of time of day but the food is pretty darn good!
the apple pie bar heated up (first saw that idea on healthy diva eats and died haha) looks amazing with the PB. can’t wait to hear your review. i’d love to try quest bars crumbled into my beloved jello pudding at night!

Jeez Louise the Quest Bars are all over the place, I’m going to need to try STAT! The past few mornings I’ve been doing an Emergen C packet with ACV for some extra Vitamins, pretty tasty. If I’m doing brinner, I need savory AND sweet. Looks like you’ve got some good eats going on!

How long have you been having ACV in a morning drink? Have you noticed any benefits to it? I considered having it daily a few months ago but ended up forgetting about it until now.
And I’ve definitely added too much xanthan gum to my smoothie before and it ended up tasting a little chalky to me. Just add a little less and you won’t even know it’s there but your smoothie will be deliciously creamy!

I started taking it in…November maybe? I’ve been taking it for a while. it has a whole bunch of supposed benefits, but I take it to regulate digestion (it’s supposed to help) and I’ve also noticed that it completely took care of my heartburn/acid reflux.
And will do next time! I’ve only used it twice so I’m still figuring it out.

I love bean and rice! I think that’s a combination that you could mix just about anything into and it’d be great! I haven’t had bacon in a long time, but I do remember that baking it is much much less messy.

Apple Pie is my most favorite Quest bar flavor, although I want to try the new cookie dough one next and if it tastes like it ought to, well then I’m thinking that will become my new fav! A smear of nut butter on top makes it even more epically delicious, great choice woman
I want to try Chelsea’s recipe too, i saw it the other day and realized it was a winner, simple and healthy to boot!
Also, that’s great to hear you are keeping up with those goals, I totes need to get a goal list together too, because there are plenty I let fall by the wayside recently, whoops

I keep forgetting to cook bacon in the oven, right now I just fry it. but I am with you in that hate doing it for the mess it creates. note to self — cook in oven 🙂

With the xanthan gum, I only add a shake. So maybe 1/8 a tsp? 1/2 would definitely be thick one!

I loveee brinner dinners and could probs eat breakfast for every meal of the day for a week and never get tired of it… Sounds like a tasty challenge 😛 I cook my bacon in a similar way but put it in the toaster over, broil it till the edges start to shrivel, flip it, and the second side only takes a couple of minutes. I agree that it’s a mess in the pan!

I love using xanthan gum and guar gum in my smoothies it makes them so much thicker and “spoonable”. I typically only add about 1/8 to 1/4 of a teaspoon to avoid the gumminess!

Holy gum-moley! I usually only use 1/8 teaspoon of xanthan gum…1/4 at the absolute most…and that’s for REALLY big shakes! I messed up ONE TIME and added too much…never again!
Yay for brinner! I could eat breakfast all day any day, but eggs are my go-to for dinner! I used to be fine with cooking bacon (except, yeah, I almost always got burned in the process) but then sometime over the summer, I got really grossed out by it! Now I can’t even LOOK at the raw stuff without my stomach turning! All I have to say is THANK GOD for Trader Joe’s fully cooked bacon! All I have to do is pop it in the microwave or a skillet for a couple of minutes and it comes out perfectly crisp…and ready to be turned into “bacon sprinkles” 😀
