Good morning!
Today is the last day before the Easter long weekend…definitely cause for a happy dance! As of 11:30 this morning, I will be off for four days
So…I like to cook. I spend a lot of time during the day perusing blogs, Pinterest, cooking magazines, cookbooks…looking out for recipes that stand out to me or look particularly tasty.
The only problem is, I forget about them almost an hour later. So I decided I needed a way to keep track.
Meet my meal inspiration board:
(yes, that is my handwriting. There’s a reason why I type everything).
Whenever I see a come across a recipe that I want to try, it goes on the board. So up there, I’ve got Skinnytaste’s Cheeseburger Casserole, and the squash and pierogi stew recipe is from Food Network magazine. I add old recipes of mine that I’m craving (my seafood lasagna), things I want to bake (cinnamon buns) and new recipes I want to put together (gnocchi, panzerottis (or calzones) and black bean burgers). If Eric wants me to make something, he’ll add it to the list too (maple bacon poutine…no surprise there). When I put together my meal plan each week, I look at the board and see what I can work into it. Definitely a way to keep me trying new things and being inventive in the kitchen!
Something that had been on the board until last week: White chicken chili. So…I put together a recipe.

White Chicken Chili
Serves six. Inspired by Giada De Laurentiis White Bean and Chicken Chili.
Ingredients:
- 1 tablespoon olive oil
- 1 slow roasted or rotisserie chicken, shredded and deboned with the skin removed
- 1 large onion, chopped
- 2 teaspoons garlic
- 2 tablespoons cumin
- 1 tablespoon dried oregano
- 2 tablespoons chili powder
- 2 teaspoons salt
- 2 cans white kidney beans, drained and rinsed
- 1 can green chilies, drained and rinsed
- 2 cups chopped kale, stem removed
- 1/2 cup corn
- 1 cup peas
- 4 cups low-sodium chicken stock
- salt and pepper
- grated parmesan cheese for sprinkling
Directions:
1. Heat olive oil in large soup pot. Add onion and cook until soft. Add garlic and cook for 30 seconds.
2. Add chicken, cumin, oregano, salt, and chili powder. Stir to coat.
3. Add kidney beans, kale, chilies, corn, and peas. Add chicken stock and bring to a hard simmer.
4. Reduce heat, cover, and simmer for 60 minutes.
5: Ladle into bowls, and top with salt, freshly ground pepper and grated Parmesan cheese.
So…you should try this. It still has a little bit of liquid in it, so I guess it’s more a ‘stoup’ than a chili? But nonetheless, it is delicious.
I know it’s getting a bit warmer and we’re slowly moving away from soups, chilis and other warm, comforting meals, but believe me: make an exception for this one. It is fabulous!

I have very messy handwriting. Not sure if you have it over there but we had to get a ‘pen license’ when we are in primary school to graduate to using a pen from a pencil and to do that you need great handwriting. I was the second last person to get my license and it still haunts me to this day. Haha not really but I do have bad handwriting 🙂

Despite it being close to 40*C outside, I just bookmarked this recipe to make soon- it sounds fabulous…I’ll just have to blast the air conditioning while eating (sipping?) it! Your handwriting makes me laugh…glad I’m not the only one with not-so-neat writing (haha notice my diplomatic choice of phrasing ;))!

Jealous that you have a long weekend!! We don’t get any time off for easter. Or any other holiday, really. My school needs to get with the program. My handwriting is pretty terrible too- don’t feel bad 🙂

I spy cinnamon buns on the list! I may have to whip up another batch of those suckers myself this weekend because they’re seriously good stuff. And what’s a holiday without a special breakfast?
I use Pinterest to keep track of the recipes that I want to make, but I’m seriously kind of bad at actually motivating myself to make them. I have a whole lot of recipes that I think sound good, but when it comes time to cook I usually stick to the same old. I’m thinking a lot of it has to do with the fat that I’m only cooking for myself. If I had someone else to cook for then I might put in more effort, but otherwise I just don’t want to bother.

I use Pinterest too, but I have no many things pinned that they get lost in the shuffle. On the board it stares me in the face so I remember exactly what I want to make.

I love white chicken chili! The recipe I have used is a lot less healthy, I will have to try this one out. To keep track of recipes I find online I email the link to myself and have a folder with fun foods to try.

SO excited for Easter break. I heart long weekends.
Ohhh, I’ve been looking for white chilli recipes! I love them so much, but always go for the tomato based versions, even though I usually prefer chili without it. Need to try this.
That is SUCH a good idea to have a board to write recipe ideas on. I always write them on my computer, but then totally forget where I saved them and then I’ll find them like 6 months later. Fail.
I can’t choose between chili or soup either, love them both!

Soup! Unless it’s joe’s chili 😉 my handwriting is usually neat unless i’m in a hurry haha then forget it. I love the idea of a board like this too…definitely seems easier to meal plan and make fun stuff that way 🙂

I use Pinterest to track my recipes but I do not think that is the best way since I pin SO MUCH!!! My handwriting is messy sometimes and then sometimes very neat – strange!

I keep track of my recipes, but not in a very organized manner. If it is an idea that I solely came up with on my own then I will write it down. If it is a recipe that has been inspired from another recipe I will bookmark that recipe on my computer, or tear out the recipe from a magazine. Needless to say, I have a TON of recipes bookmarked on my computer and a whole stack of recipes from magazines. One of these days I am going to get organized! 😉

It’s definitely still winter where I am, so a warm bowl of this delicious-looking chicken chili would be MORE than welcome! The photos are seriously making my mouth water. YUM. I also adore Giada de Laurentiis, so any recipe inspired by her wins my heart immediately. 🙂
The recipe board is such a great idea! I’m constantly perusing Pinterest, blogs, magazines etc., too, but like you, I can never for the life of me remember what I wanted to make. Even when I pin or bookmark something, I forget about it. Thanks for the inspiration–I think I may need to buy a white board soon. 🙂
Soup or chili? Both, however I prefer chili as a meal, as it’s actually substantial enough to keep me full. Soup is nice when I’m eating it alongside something else.

MMMMM. That looks really good and comforting (it’s still cold here LOL). I don’t track a lot of new recipes because due to my terrible cooking I make new things that are “complicated” once or twice a month. Normally I see it and I’m like…okay looks good to me. I have made homemade gnocchi though which turned out really well.

I love it! I have a post-it note on my desktop where I keep track of meals I want to make. Your white board is way cooler though. 😀
Also that chili looks awesome – I love white bean chicken chili! It’s such a good twist on regular chili. I made it I think two years ago, but I haven’t made it since. I need to make it again soon! I prefer chili to soup because I like that it’s heartier.

That meal inspiration board is a brilliant idea! I always get cravings and ideas for meals, but when I actually go grocery shopping or go to cook, I can never remember, so I just eat the same things! I’m starting a list 🙂
