Five Things Friday: 03/22/2013.

Woot Friday!! 3 weeks until I’m done classes! (Why yes, I am counting down).

Thank you so much for your well wishes on my job interview yesterday! I think it went well (at least, I’m hoping I managed to impress them).

And..lists of things!

5 Delicious Meals that Escaped the Blog:

1. Roasted cauliflower, salmon, and brown basmati rice that I cook in chicken broth with a few strands of saffron. While I prefer steamed broccoli to roasted, I’ve decided that roasted cauliflower is amazing.


2. BBQ Chicken nachos. I tossed some shredded chicken with BBQ sauce, and served it on top of low-salt tortilla chips with salsa, red bell pepper, green onion, salsa, and mozzarella. Served with sour cream and guacamole – and yes, we finished it off between the two of us.


3. Buffalo tofu (with more buffalo sauce), kale chips (with buffalo sauce) and Irish soda bread. The obsessions continue. Notice how the chips are significantly less burnt this time.


4. A breakfast cookie. I used to make these once in a while, but I’d forgotten about them lately. Seeing Lisa’s delicious-looking breakfast cookie creations made me crave one again! I made this one with peanut butter, vanilla whey protein, applesauce, cinnamon and raisins. Going for an oatmeal raisin cookie kinda thing.


5. Grilled cheese (mozzarella, brie and a slice of ham) with some incredibly sad looking yellow beans. Dinner of champions – copious amounts of ketchup was added post picture.


5 Things I’m Loving Right now.

1. My candy jar.


It sits on my coffee table. I realize it can be added to the list of things that makes me 80 years old, but I just love it.


C’mon…wouldn’t that make you happy?

2. Coconut almond milk. A few weeks ago, the best friend told me that her mom had picked some up – my immediate reaction was “I want it!” So she very nicely gifted me a box while I was home(thanks love!). It is delicious – adds such a nice creaminess compared to regular almond milk!


3. Quick cooking oats. I usually pick up large flake oats, but I accidently grabbed quick-cooking last weekend. And they’re so much more voluminous than the large flake. Such a little thing, but happiness inducing.


3. The combination of a graham cracker, peanut butter, and coconut Oikos. It is pretty much perfect.


4. Coconut Oil. I’ve been using it as a moisturizer on my face at night, and ohmygoodness my face is smooth. And it ensures that I go to bed dreaming of tropical things…mainly pina coladas. Open-mouthed smile


5. The Name of the Wind. I have about ten pages left right now, so I’ll be finishing it tonight (Thursday night). It came recommended by Amanda (and I know Lisa and Caitlin loved/are loving it as well) and it is amazing!

Five Things Friday: 03/08/13.

Friday dance! I get to go home tomorrow morning, so I’m definitely excited for the weekend. Now, the question of whether or not I’m going to get any work done during said trip home remains to be seen. But…that’s ok. Open-mouthed smile

5 Delicious Eats That Escaped the Blog:

1. Heather’s Thin Mint Cookie Pancakes. The only problem was that I used whey protein instead of the hemp protein powder she used, and measured in tablespoons instead of grams. It didn’t convert exactly – I didn’t end up using enough. So, the batter ended up a bit runny…


and the pancakes a little bit ugly/sticky. But still delicious though!

You know what you do with ugly food?


Add sprinkles and more chocolate. No one will notice, promise. Smile with tongue out Next time pancakes, next time.

2. Part 1 of dinner Wednesday night.


Deliciously gooey garlic bread with melted cheese. So. good.

3. The second part of dinner Wednesday:


Yup. Wednesday night Eric and I split a loaf of garlic bread and small shrimp ring with cocktail sauce and called it dinner.

It might have been the best dinner I’ve had in a while. When I go to parties/events I tend to inhale half of the shrimp ring anyways, so why not just make it into a meal?

4. Oatmeal with berries, strawberry jam and eggs + egg whites.


One of my favourite breakfasts. Evidently, I cook the oats in the microwave…messy bowl much?

5. Steak night!


Why yes, I am carnivorous – I bought a 1 lb top sirloin steak last weekend, so Eric and I split it 60/40 (except I gave him what I couldn’t finish…so in the end, more like 70/30? Boy likes his steak) with salads on the side. That’s spinach, blueberries, grape tomatoes, mozzarella and almonds, topped with Italian herb olive oil and fig balsamic. Looove.

I used to be terrified of cooking meat, especially steak – I was always afraid I’d overcook it (I need it medium rare – medium or nothing). But I seem to have gotten better with it!


Peeerfect (and a nice shot of fat on the end…lovely).

5 Happenings of the week:

1. I cannot for the life of me win Roll Up the Rim at Tim Hortons.


Ever. It doesn’t matter whether I buy 1 of the red cups or 200, it just does not happen. C’mon Timmies, all I want is a free donut.

2. Slightly milder weather means I get to wear leggings instead of real pants and not freeze.


I was going to say “Yay spring-like weather!” But then I remembered that it hailed yesterday. And snowed last night. Boo.

3. I’m obsessed with this gum.


I’m going to Costco this weekend and I am stocking up. It remind me a little bit of the Bazooka Joe gum I loved when I was a kid, except there’s no comic, the flavour lasts more than 12 seconds and apparently it whitens my teeth.

4. Eric and I are re-watching season 2 of Game of Thrones in order to prepare for season 3. Yes, we are obsessed.


5. You know how I said I was going to foam roll after my workouts and not be late this month? Yesterday, I got home from the gym with exactly 25 minutes to foam roll, shower, get ready and eat lunch before running out the door again. And I pulled it off – I’m impressed with myself.

5 Songs I’ve heard at the gym this week that made me happy:

1. Mortal Kombat. I’ve mentioned this before, but I’ve heard it again a couple of times. It is actually a good ‘get-pumped-up’ song.

2. Taking Back Sunday.

3. Disturbed. Interesting choice, I suppose!

4. Lonely Island. Nothing like bursting into giggles in the middle of a set.

5. Bowling for Soup. Makes me want a pair of Dickies again…

Five Things Friday: 22/02/13.

Happy Friday! This is the last official day of my week off of school…sigh. But nonetheless, there is definitely some great things lately!

5 Things I’ve Eaten Recently:

1. Crockpot Coq Au Vin on whole wheat egg noodles:


Not going to lie…this was not great. It was edible, but the sauce didn’t thicken up enough and a slow cooker does weird, weird things to bacon. Time in the fridge did improve it a bit though – the leftovers are more tolerable. I think I’m going to try a traditional recipe in the future though; it had possibilities!

2. Still doing my All-Bran for breakfast a few days a week: this was 1/2 cup All Bran with a bit of Nature’s Path Coconut Chia Granola, grapes and unsweetened vanilla almond milk. 2 eggs +  egg whites on the side. And that is a candle shaped like a cinnamon bun that I got for Christmas – it’s so cute that I don’t want to burn it!


3. Shrimp tacos. Seriously one of the best dinners I’ve put together in a while – I cut jumbo shrimp in half and marinated them in lime juice, salt, pepper, cilantro, and chili powder, and then sauteed them in coconut oil. Tossed into tortillas with lettuce, salsa, guacamole and sour cream – so.good.


4. A Quest Peanut Butter Cup chopped up in vanilla Greek yogurt. I’ll be reviewing Quest products in a few weeks, but I will tell you know that the cups are greatly improved when thrown in yogurt over eating them by themselves.


5. A Waffle-wich. I inspired Sara to buy waffles, she inspired me to make a sandwich with them Smile with tongue out. An egg, a bit of cheddar, a slice of shaved ham, and strawberry jam sandwiched between waffles. Awesome breakfast.

1. After the Ivy League – I’m Not Skinny (And I Don’t Want to Be). Seriously, the best attitude regarding health and body image.

2. Lisa Lately – Be the Best Version of You. Trying to be someone else is unnecessary – just do you!

3. Peace Love and Oats – You’re Good Enough NOW. Don’t hold off on pursuing your dreams and goals; go after them now!

4. Picky Runner – What is Perfection? I’m sure a lot of relate to the type-A personality syndrome, but we don’t have to spend all our energy trying to reach some obscure level of perfection. Relax a little and take it easy on yourself!

5. Nourish and Flourish – Trustworthy Sources (and Fried Egg Wafflewiches). We sometimes put too much faith in outside sources (bloggers, the media, health professionals) to tell us the best ways to fuel our body. Really, it should be OUR bodies dictating how we approach food.

5 Things that I’m Loving this Week:

1. Guacamole. Whether I make it, order it, or buy it from the grocery store, it never fails to make me happy. So good.


2. The fact that I’ve been wearing yoga pants and tshirts all week. Comfy house clothes for the win!

3. This granola. I finally got around to opening it this week, and it will not be lasting long. Dark chocolate and red berries – yum.


4. The fact that it is March in exactly one week. Although February is the shortest month, it’s always the most depressing. Bring on Spring!

5. Waffles. I’ve been missing out the last few years.


and now I want to go out for breakfast and order the biggest Belgian waffle I can find…
