Xyla Review: Coconut Dipped Baked Banana Donuts.

This is the recipe that I had posted on Tuesday, but decided to take it down as it didn’t feel appropriate. I still wanted to share it, so I decided to post it today. Enjoy!

 

Xyla Review

A few weeks ago, I was contacted by a representative at Xyla to try out some of their products.

Xyla creates various products (candies, chocolate, jams, etc) made from xylitol. If you’re unfamiliar with it, xylitol:

  • is all-natural; it is naturally occurring and extracted from fruits and veggies
  • contains 2.4 calories per gram (40% less than sugar) and is absorbed as a complex carbohydrate
  • is good for diabetics, as it’s a natural insulin stabilizer
  • has dental benefits; it can reduce plaque, dental cavities, and helps prevent demineralization of tooth enamel

Sounds pretty good, right?

In the package that Xyla sent me, I received candies/mints, gum and the xylitol granules. Of course, I wanted to try everything:

The candies are interesting: they’re candy, but they’re recommended to help prevent cavities. Kind of the opposite of most candy, don’t you think? These were pretty good – I would pop 3-4 when I wanted a burst of flavour. Although, I found it odd that the lemon lime was really sweet, while the watermelon flavour was kind of sour.

The gum…meh. The flavour was nice, but it was gone really quickly. And the texture was a bit off – almost too chewy.

Of course, the real test was the granules themselves. Out of the bag, they had an almost citrus-y taste, which threw me off a little bit. But when I tried baking with it?

I never would have guessed that it wasn’t sugar. There was absolutely no aftertaste, and the baked goods were just as sweet as they would have been using plain old white sugar.

So…the recipe.

Donuts

One childhood memory that stands out a lot as a kid was making donut stops at Tim Hortons. It would usually only happen when on road trips or special events, but it was awesome. Being the chocolate fiend that I was (and am) I usually went for my favourite, Chocolate Glazed. Although now, I would have to give that title to Sour Cream Glazed.

So when I was trying to decide what I wanted to make with my newly-acquired Xyla, I decided to revisit some of those memories and make donuts Open-mouthed smile I’ve had a donut pan for about 2 years now, but I’m pretty sure I’ve only used it once. Pretty unacceptable. I decided to go with banana, because really – who doesn’t like banana flavoured baked goods?

These are baked, so obviously not quite like the Timmies donuts of my childhood. But, they are every bit as delicious. And if you don’t have a donut pan, they would work just as well as muffins – you just would require some extra time in the oven.

Coconut-Dipped Baked Banana Donuts

(serves 6. Basic donuts inspired by this recipe)

 

Ingredients:

  • 1 large banana, mashed
  • 1/4 cup plain Greek yogurt (I used 2%)
  • 1/4 cup Xyla
  • 1 egg
  • 2 tablespoons coconut oil, melted
  • 1/2 teaspoon vanilla extract (if you want even more coconut flavour, use coconut extract)
  • 1/2 cup whole wheat pastry flour
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • dash salt

Glaze:

  • 1/4 cup coconut butter
  • 1/4 teaspoon xanthan gum
  • 1/4 cup milk (I used almond coconut)
  • 1/2 teaspoon honey (optional if you want the glaze to be a little sweeter)
  • crumbled banana chips (optional, but not really)
  • unsweetened shredded coconut

Directions

1. Preheat oven to 375 degrees and grease donut pan. Beat mashed banana, yogurt, and Xyla.

2. Add oil, vanilla and egg. Beat until mixed.

3. Add dry ingredients. Beat until just incorporated – do not over beat.

4. Pipe or carefully spoon batter into donut pan. Bake for 12-14 minutes, or until golden brown and donuts spring back when pressed.

5. Let donuts cool in pan while you prepare glaze.

6. Add all ingredients together and heat – either stovetop or in the microwave. Stir often. Place in shallow bowl.

7. Dip donuts in glaze. Add coconut and banana chips, then let glaze harden. Store leftover glaze in the fridge.

So…these are pretty fabulous. Soft, fluffy, and taste like banana bread with an added hint of coconut. Like I said, you would never have guessed that it was Xyla as opposed to white sugar in there.

Zombies + Fast Food = Date Night.

Hello loves! I hope everyone’s weekend has gotten off to a good start.

No complaints here – I had a great meeting Friday with my thesis supervisor, and I’m actually really excited to get started on the project. That’s probably a good thing; it’s basically going to be my life for the next year, so good thing I get excited doing the research for it!

Friday Dinner

I had left a pork tenderloin marinating in salt, pepper, apple juice concentrate, olive oil and basil during the day, and then I threw it in the oven at 350 for about 40 minutes. With roasted potatoes and green beans, it made for an awesome meal. I basically just used Friday night to get some work done, then collapsed in bed around midnight. I’m impressed with myself I made it that long – I was feeling pretty sleepy by about 8:30. Yup, party animal right here.

Saturday

Breakfast Saturday morning made me so, so happy.

Banana oats in a chocolate peanut butter jar. Nut butter, banana and chocolate – I’m pretty sure it is actually impossible to beat that combo.

I went to the LCBO today and picked up one of the wines that I tried at the Food and Wine Show a few weeks ago. Voga Moscato – Italian, with a little hint of bubbliness. So good.

This will not be lasting long. I’ve had the White Chocolate and the Dark Chocolate PB & Co and adored them, but Cinnamon Raisin was a new one for me. When you consider my inclination to dump a ridiculous amount of cinnamon on my food daily, it’s not really surprising that I’ve already inhaled more spoonfuls than I care to admit :-p

Dinner

So when it came time for dinner yesterday, someone had a craving (and I had a coupon)…

We got A & W coupons in the mail a few days ago, and Eric specifically requested we go this weekend. And who am I to say no to a craving?

While I don’t think fast food is something to be eaten on a regular basis, I’ll eat it every once in a while (maybe a few times a year). Everything in moderation, right?

I got the veggie burger, which came with swiss on a whole wheat bun. Hey, at least they’re trying to healthify things, right? Obviously not the best veggie burger I’ve ever had, but I’ll take it. And for the record, the best fast food veggie burger is from Harvey’s. Hands down. I also split an order of onion rings with Eric.

We ate dinner while watching 28 Days Later. Fast food and zombies…we’re romantics, aren’t we?

WIAW #15: Ice Cream Is A Topping.

Hello Wednesday.

AKA: What I Ate Wednesday! Thanks to Jenn for hosting.

So, I feel like a lot of my meals yesterday fit in quite well with Laura’s #StrangeButGood campaign. Weird, yes. But delicious.

Breakfast

This has become my newest breakfast addiction. As in, eating 5-6 days a week right now.

Oats made in the microwave with half water, half almond milk and cinnamon/vanilla stevia mixed in. Topped with strawberry jam, nut butter (I went with Justin’s Vanilla Almond this time….and killed the jar. Sadness) and 1 sunny side up egg + splash of egg whites. Seriously, in love right now.

Followed by the advent calander chocolate, of course. Although, could someone please explain to me what a mushroom has to do with Christmas? (added: oh wait, I think it’s supposed to be a bell…nevermind).

After breakfast, I had a bit of shopping to do. Not Christmas shopping, mind you – I  managed to get that done last week. That’s a bit of a Christmas miracle right there, I’m usually shopping up until a few days before.

Nope, I needed a new phone.

My mom, my brother and I had been on a family plan with another company for years…since I was in high school. Well, contracts kind of suck. So we all decided to get new phones/plans.

I finally own a smartphone! Seriously, I’ve been behind on this trend for a long, long time. Anyone else have an HTC One V? So far, I’m really liking it.

Lunch

For lunch yesterday, I decided to break out the tempeh I bought last weekend.

I made an open faced tempeh sandwich with spinach, a bit of mayo, honey mustard and pickles. On the side I had steamed broccoli, carrots and the rest of the tempeh.

It was ok – I don’t think I’ll be in a huge hurry to buy it again though.

So…my camera ate my afternoon snack picture. So this is what you get:

The afternoon/evening was spent playing around with the phone, catching up on TV, and wrapping Christmas presents. Seriously, loving vacation.

Continuing with the Asian theme of the last few days, apparently. A brown rice stirfry with chicken, veggies and my homemade stirfry sauce. Hit the spot!

Snack

For my before bed snack, I couldn’t decide whether I wanted yogurt or ice cream. So, I went with the only logical option:

Chocolate casein yogurt with an ice cream topping. Open-mouthed smile Yea…I’m an interesting one.

Jenny’s Christmas Challenge:

Oh, stockings. Seriously, one of my favourite things about Christmas. In our stockings, there’s usually some combination of the following:

  • chocolate (usually Reese’s, because everyone in my family is a huge peanut butter and chocolate fan)
  • socks and/or underwear
  • deodorant/hygiene stuff
  • clementines
  • other odds and ends (nail polish for me, chips/pringles, energy drinks for my brother, pens)…really, whatever my mom can shove in there!
