MIMM: Staying In.

So, I had a quiet weekend. Lots of relaxing and hanging around with Eric – exactly what I was hoping for! Last weekend was busy and we’re back in London next weekend, so I was all too happy to keep this one quiet and (mostly) confined to our apartment.

Friday night started off with a tasty dinner of homemade “fried” chicken (skinless chicken drumsticks breaded in cornflake crumbs), sweet potato fries, and salad.

I found myself with a froyo craving and it was pretty nice out, so we took a walk down to Yogurty’s (A few days ago, Amanda was talking about those sorts of cravings where you’d run someone over that got between you and the desired food. Yea, it was one of THOSE cravings).

In the mix:

  • a combo of cookies and cream, snickers, and birthday cake froyo
  • frosted animal crackers
  • yogurt covered pretzels
  • s’mores topping (!!!!) – definitely a new one, and of course I went a tad nuts with it.
  • caramel truffles

And then we managed to stumble across a random fair. Kind of surprising – I thought fairs were a fall thing?

It made for a nice walk, anyways.
Side note: how awkward is it to be a couple walking past all the carnival games when there isn’t a lot of people around? I’m pretty sure every single one of them tried to play off the “win the lady a prize!” thing. I’m pretty sure I could never do that job. That’s some intense sales pitches right there.

Saturday was shopping…so much shopping. April-June is pretty crazy around here, birthday/holiday wise. In a time period of about 7 weeks, I have 4 birthdays to buy for, plus Mothers Day and Fathers Day. Insane.

I usually don’t cook Saturday nights, so when Eric requested Harvey’s for dinner, I went with it.

That would be a veggie burger with everything, onion rings and a diet Coke. Yup, I eat fast food sometimes. It’s obviously not something I would eat all the time (or even more than once every couple of months) but once in a while, it’s fine. And Harvey’s actually does a pretty decent veggie burger, whole wheat bun and all. It used to be something I was absolutely terrified of and would not touch, but now I’m fine with it.

It’s interesting how healthy living bloggers are fine with decadent desserts and sweet potato fries once in a while, but fast food seems to be completely demonized. Just something I’ve noticed!

Sunday

Sunday involved so tasty snacking:

So I was powering through those all afternoon. They are awesome – definitely reminded me of Nacho Cheese Doritos. Right down to the orange powder that gets everywhere afterwards.

And some homemade applesauce. I swear, I will never buy commercial applesauce again. Just does.not.compare.

And I spent some time doing a bit of blog work behind the scenes. I’ve got some exciting changes and announcements for Better With Sprinkles coming up soon – so keep an eye out Winking smile

And I put that applesauce to good use for dinner – pork chops with applesauce, quinoa, and green beans.

So the weekend for me was basically: relaxing, reading, eating, shopping, and couple time. Absolutely what I needed – an easy weekend smushed in between two busy ones. Now I’m feeling charged and ready to go for the week ahead. Sometimes, you just really need a simple weekend at home!

Weekend Eats and Experiments in Kombucha.

Good morning! I hope everyone had a fabulous weekend!

Mine was pretty quiet – it’s the weekend before Easter and I have a lot to do school-wise considering that it’s end of semester. So an easy weekend around the house it was.

After I got home from my morning of grocery shopping Saturday, I finished off the last of the buffalo tofu I made earlier in the week on an arugula salad with peppers, baby carrots and a spoonful of caramelized onion hummus. One of the last chunks of my Irish soda bread on the side.

Saturday afternoon consisted of a quick trip to the gym for an ab workout and a quick HIIT run on the treadmill and getting some homework done. I also did a bit of Easter decorating, because apparently I like to decorate for every holiday.

So fun fact: at one of the Christmas parties I went to in December, I decided that I really liked the table centerpiece. So, I took it home with me.

It is a ginormous, gold-painted branch with a bunch of icicle decorations on it. You know what’s awkward? Trying to carry that inconspicuously across a parking lot. In the middle of winter. Wearing a short dress and tall shoes. And getting into a limo. But totally worth it because it looks gorgeous and fills the empty spot on my stair landing perfectly.

And…I redecorated it. Easter-style.

I’ve got:

  • a mix of peppermint white chocolate, chocolate coconut, and caramel popcorn froyo (I can’t even. They were all amazing)
  • chopped Reese’s
  • peanut butter chips
  • frosted animal crackers
  • sprinkles
  • cinnamon toast crunch

Best.dinner.ever.

And now I think I need a box of cinnamon toast crunch. That is my childhood cereal right there.

Banana oats topped with blueberry jam and a bit of Nature’s Path Dark Chocolate and Red Berries granola. Hit the spot for sure.

After breakfast, Eric was running some errands which happened to take him right next to Goodness Me!, the health food store in Brantford. Soooo I invited myself along.

I mean, I had to stock up on my Zevia stash Smile with tongue out I also picked up digestive enzymes (the newest experiment in my quest to fix my stomach) and the Good Bean chickpea snacks in sweet cinnamon. I saw these on Allison’s blog last week and I was intrigued, so when I saw them at the store I decided to give them a shot. They’re pretty good – not too sweet, and they have a good crunch to them.

I also decided to give kombucha a try.

A couple of people recommended it for stomach problems, so I picked one up. It’s…interesting? I like it, but it took me a little while to get used to the ferment-y flavour. Not something I’d pick up too often based on the price tag itself…yikes.

Dinner

Dinner definitely demonstrated my carnivorous side.

Yes, that steak takes up half my plate. And yes, I ate all of it. To be fair, it’s a much less impressive feat when you take out the bone and all the little fatty chunks. Such a fabulous dinner.

Sunday night was spent watching TV and relaxing – prepping myself for the week ahead. Although, it’s a short week…yay Easter weekend!

Happiness-Inducing Weekend.

Good morning! I hope your weekend was fabulous. If you were up late watching the Oscars last night…how was it? I can add missing award shows to my list of things I miss about cable (first and foremost: The Food Network. It has been way too long since I watched a random episode of Chopped).

Between school stress and a little bit of winter blues, I haven’t been feeling quite so cheery lately. So, this weekend my focus was making sure to incorporate a bunch of little things to make myself happy. Friday was pretty average – homework, gym, a meeting with my Thesis Supervisor,  and a chicken stirfry dinner. So, we’ll just get right to Saturday.

Saturday

After I did my grocery shopping for the week, I took some time to do a little bit of shopping for myself. My fruitless search for a new pair of jeans continues – apparently, I’m pretty picky. I’m planning on heading home to London for a weekend in a couple of weeks, so I’ll wait until then. I did manage to find myself a new workout top (which I shall get to in a few minutes) though!

And I did show myself some pampering on Saturday:

Mmm, manicure.

The nail salon a few blocks away does a decent manicure for $15 – I need to take advantage more often! Of course, the solitary princess nail was a must. I kind of live for the hand massages you get with manicures – I would seriously pay money just for that.

For lunch, I had to dig into some of my new grocery purchases, snack plate style:

Any other Canadian girls (or boys) get excited when these fliers come out? From what I recall, they have a holiday edition, a blue menu (health-ified) and a summer one. PC actually has some great stuff, so I always like to see what they come out with. I did find out that they’ve started selling 0% plain Greek yogurt in the massive tubs…and I want to try those caramel yogurt smoothie bars.

Dinner

The best friend was supposed to come up for the night, but unfortunately, an issue with her car prevented that. I hate it when stuff like that happens! Eric and I still managed to have a good night though. I had absolutely no intention of cooking dinner, so Eric suggested Subway. Which happens to be right next to Yogurty’s…

I got my usual bread, cheese and toppings (whole wheat, swiss, lettuce, tomato, green peppers, cucumbers, black olives, pickles, banana peppers, honey mustard) but I got a ham and turkey instead of chicken. I know – that’s some craziness right there.

But clearly the froyo was the important part of the meal.

Tiramisu and chocolate truffle froyo with yogurt-covered raisins, mini M&M’s, ‘sparkling strawberry candy (I have no idea where the sparkling aspect came from, but they were tasty), sprinkles (obviously) and iced animal crackers (I NEED A BOX OF THESE. Ahem).

I didn’t want it melting on me while I ate dinner, so I threw it in the freezer for about an hour and a half. It was pretty much the best idea ever – usually when I get self-serve froyo, it’s half melted by the time I get to the bottom. This allowed the yogurt to firm up a bit, but not too long in the freezer that the toppings froze too. Such a small thing, but definitely happiness-inducing Smile

Another happiness-inducing moment? A few months ago, Eric told me that he had never seen The Lion King. UNACCEPTABLE.

So…that’s how we spent Saturday night. Cannot go wrong with a good Disney movie, amiright? And side note – why have I never realized that Matthew Broderick was adult Simba?!

Sunday

Sunday was a fairly typical Sunday – I got some homework done, updated my resume (right, I need to work this summer), and swiffered/vacuumed. I did get in a quick gym session wearing my new top though:

Dinner

Dinner just screamed of homey-ness and comfort food.

Roast beef and mashed potatoes with gravy (and gravy can go on the list of things that don’t photograph attractively…yikes) with steamed broccoli on the side. Mmm, comfort.

So while I didn’t do anything too ridiculous or out of the ordinary, I was still happy with my weekend. I’m starting to be more comfortable with the fact that I am a homebody – I don’t need to be going out and doing crazy things every weekend. If they become my time to treat myself, relax a bit, and get stuff done around the house, than that’s awesome. That being said, as soon as the weather has improved I have told the bestie that I will be in need of a bar-hopping night Smile with tongue out

Today is (somewhat) back to the grind for me – I don’t have class, but I have a list of work to get through and my TA class has their midterm today. Have a great one!
