So, exciting news. As of 2:30 pm, I will officially be done with graduate level classes! Open-mouthed smile Next year is Thesis work, so I’m not graduating until 2014, but the fact that I never have to take a class in school again if I don’t want to is a good one.

But on to…lists of things!

5 Things I’ve Eaten Recently:

1. Oatmeal with blueberries, Bee’s Knees peanut butter, and a fried egg. Yes, I love fried eggs on my oats (get on it Sara! Winking smile)

2. Ribs.

They were on sale this week and Eric absolutely adores them, so I picked up a package. I’m actually really happy with how these turned out – I made up a dry rub of salt, pepper, cumin, chile powder, Montreal steak spice, and a mango chili seasoning and baked at 325. And of course, BBQ sauce for dipping.

And I made broccoli on the side, so it’s healthy, right? Winking smile

3. Slightly charred tuna melts.

A lesson: keep an eye on the broiler. Still good though!

4. Eggs Benedict with hash browns.

I love eggs benedict, but never bother to make it at home. One, because poached eggs intimidate me. Two, because hollandaise does too. And yes, hollandaise was definitely dumped on those eggs before consuming.

5. Leftovers of the squash and perogie stew I made for dinner Tuesday.

I love eating stew and soup leftovers – the longer it sits in the fridge, the more flavour it gets.

5 Things I Learned This Week:

1. The boyfriend loves Turtles (the chocolates). So, bringing home a Turtles cupcake does not result in a 50/50 split.

So this cupcake was amazing. The cake part was moist (sorry if you hate that word!) the icing was fluffy, and it had a caramel injection in the middle. The shop (Decadently Yours in Brantford) just opened up a few weeks ago…about a 5 minute walk away from my apartment. Yup, I will definitely be back.

2. Crazy violin a la Lindsey Stirling is fabulous running music.

Running to this on a sunny, warm afternoon…I’m not going to lie, I kind of felt like I was in some sort of Disney movie music montage. If I could play any instrument, I’m pretty sure it would be the violin. I remember the first time I saw the Trans Siberian Orchestra a few years ago, I was absolutely blown away by the female violinist. Something about a female violinist in a ‘punk rocker’ or whathaveyou getup is so badass.

3. 30 minutes in recipe time = an hour in real life. I don’t know if I’m just slow, but every time I follow a recipe it takes me double the amount of time to make it, at least.

4. Long papers are no longer really intimidating to me. For one class, I had to write critical summaries each week. These papers normally took between 8-20 pages for me to write…EACH WEEK. So now when one of my undergrads complains about having to write a 5 page paper, I laugh a little on the inside.

5. 3 inch stilettos are not appropriate footwear when it’s raining outside.

Especially when you don’t have an umbrella…or a jacket. That was not pleasant, to say the least.

1. Lime and Macadamia Pinata Cake from Claire K Creations.

Can you imagine slicing open a cake and having all that pour out?! That is freakin’ genius.

2. Slow Cooker Chicken Tortilla Soup by Baked by Rachel.

I’ve never made chicken tortilla soup before, but I’ve thought it sounded good. And we all know how in love with my slow cooker I am, so…yea. Need to make this.

3. Thin Mint Puppy Chow from Your Cup of Cake.

So I know there’s a million different version of puppy chow out there, but…I need this one. Thin Mints are amazing.

4. Other Ways to Say… From Jessie’s Resources.

So I’m pretty sure almost every blogger or writer out there would find this useful. Always good to find new words to spice up your writing! Just so you know, I’m going to start using ‘stupendous’, ‘congenial’ and ‘colossal’ more often. Ok? Ok.

5. And to end it off on a positive note:

A choice I try to make on a regular basis.

Remember this banquet I went to last December? Well, they have another one tonight, and this one is rumoured to be bigger and better. And…we get a limo again! Open-mouthed smile

<— If you were to break open a pinata, what candy would you be hoping was inside? The candy you’d be disappointed to see? I’d want kisses and mini Reese’s. I always thought it was rip-off when it was full of tootsie rolls and suckers.

I think I’d love it for most of my foods 😉 This week I’ve learned my boyfriend is very good organising me – yesterday he literally steered me through my morning! Love that ‘Other Ways To Say’ list as well as the pinata cake. I’d love to see most sweets inside 😉

  2. If I cracked open a pinata and Lindt came flying out, I wouldn’t complain one bit ;)! Congrats with (almost) completing all your graduate classes…a huge achievement for sure! And you know I love that last quote….and it’s one I have tried to incorporate every day lately! While I might not be able to change a situation, I sure can change my reaction :)!   3. I always put egg whites in my oats, but that’s interesting to put one on top! Um… that’s legit the best idea for a cake I have ever seen haha I would want anything chocolate to be flowing out 🙂

  4. That pinata cake. I need that. Right now. I just went to the website to share the recipe with my roommate. Anyways, yayyy for being done with classes! That must be such a great feeling! I have a long way to go and I am getting excited just thinking about the day I can say the same as you. I guess I’m similar next year taking 2 night classes and then doing an internship… Have a great weekend!!

  5. I love all of your pins! And I’ve never tried a fried egg on top of my oatmeal. The real question is if you leave the yolk unpoppped, so as to have an explosion when you’re eating your oats. Now THAT sounds pretty exciting. ALMOST as exciting as the pinata cake. Haha.

  7. The carmel injection in the cupcake sounds wonderful, I love car bomb cupcakes that have a ganache in the middle. I always put egg whites in my oats but still havent tried the whole egg fried on top yet. I have always loved tootsie rolls, I would want a pinata with tootsie rolls, reeses pieces and cadbury mini eggs!

  8. Congrats on being done with classes! Ahh tuna melts and RIBS- two of my favorite things! (especially ribs!) A pinata filled with bags of sour patch kids, sour gummies and gummy bears would be my ideal pinata. Hands down. Happy Friday!

  10. I would never think to combine PB and eggs, but I am fairly certain that PB tastes good with everything, so I definitely want to give that a shot!

  11. Congrats on being done with classes today! Such a huge accomplishment! Ok, thanks to this post I now want a turtle cupcake, soup & a ton of candy at 8:30am 🙂 We had a birthday party for a friend awhile back & since we were all adults we filled the piñata with practical things like lotion, vitamins & tissue, it was hilarious!   13. Listening to Lindsey’s music always makes me feel like I’m living some kind of video game and I kind of love her for it. Her Zelda tribute? Major gushing right there. I guess I’m kind of a closet geek :mrgreen:

    One thing I learned just this morning is that I do NOT handle technology fails very well. I had to figure out how to work the fax machine from home today and probably nearly gave myself a stroke when it refused to work. All turned out well in the end, but there was a little while there where I thought I would go crazy. TGIF!

    That pinata cake is seriously the coolest thing ever. My idea pinata would be filled with Hershey’s kisses (the cookies ‘n cream and caramel filled ones), Swedish berries, fuzzy peaches, and mini kit kats and coffee crisps!

  19. There are so many things I love about this post. I don’t know where to begin! haha. First of all I am right there with you on the ribs with BBQ (of course!) sooo tasty! Second, I love LOVE LOVE Lindsey Stirling. I got to see her concert last month and it was amazing! She’s even better live! Third, that pinata cake looks sooo much fun and sooo tasty! I can’t wait to check it out! And lastly, the thin mint puppy chow looks soo delicious! Yum yum yum! 😀

  21. I saw that pinata pin the other day and was just like…. wow, pretty colors lol. If I tried to recreate something like that, well it would be one major hot mess of a creation! As far as candy goes, if snickers, twix, gummy anything and tootsie pops were to come flying out, I would be one happy camper 🙂 Gross candy? Any of those narsty colored hard candies that are often associated with grandma’s house haha

  22. Ahhh, fried eggs on oats are haunting me!! In just the past week, I’ve seen recipes in two magazines! Not only that, but they’re popping up on blogs right and left, too. I think I have no choice but to jump on the train—eventually. 😉 Your bowl *does* look delicious, though. So maybe that *eventually* will be sooner rather than later.

    The turtle cupcake looks amazing. Caramel injection? Gimme gimme. And I totally commiserate with the “it says 30 minutes, but it took me an hour” cooking scenario. I am so slow in the kitchen! But cooking is my therapy, so I like to be relaxed and methodical. Or, more likely it’s because I just really suck at following directions, and I have to start over when I burn something. :-p

    Love the pinata cake pin! I pinned the same one (or a similar one–can’t remember) a few weeks ago, thinking I could make it for a friend’s birthday. It never happened, but I remain hopeful that some day I’ll feel domestically ambitious enough to take it on. I also pinned the Thin Mint Puppy Chow and “Other Ways to Say”—clearly we’re Pinterest twins!

  23. Omg, that cake is INCREDIBLE!! Let’s see, you know I’m not a HUGE candy person, but the child version of myself would LOVE to have seen reese’s and pb M&M’s and disappointed in suckers and other hard candy (which I rarely even go near now…they just don’t do it for me at all)!

    Love that word chart…now I just need a list of other ways to say delicious since I say it ALL the time! Lol

    Those ribs look (can you guess what I’m gonna say?)…DELICIOUS!! And with mango seasoning? Omg!

    Am I the only person in the world who doesn’t like Hollandaise?? What’s wrong with me? I’ve tried it twice and just have yet to see what all the fuss is about!

    Oh, but I am right there with ya on the violin! I SO wish I knew how to play! TSO rocks…and now I’m off to check out that video! I saw the video Amanda posted of this girl and Pentatonix doing an Imagine Dragons cover yesterday and it blew me away!!
